Dinner on Day 15 of the Daniel Fast

The countdown is on to the finish of the 21 day Daniel Fast. I’m having to get creative with my meals, as to not have sugar, meat or dairy. So last night’s dinner was a concoction inspired by the pasta box. Ronzoni Pasta had a great recipe on the back of the box for a pretty tasty wholesome meal. It was some type of Bruschetta pasta and thankfully I had all the ingredients in the pantry.

It requires,

  • Whole wheat pasta
  • Minced Garlic 1 clove
  • Diced Tomatoes
  • Olive oil
  • Basil (dried or fresh)
  • Oregano (dried or fresh)
  • Salt and Pepper

I guessed on the measurements,  and left off the Parmesan cheese, and it actually turned out pretty good. For desert I only had oranges. Not to exciting I know, but they were quite sweet after the cold front we had and after not having any sugar for weeks, all fruits taste sweeter.

I’m trying to stay motivated to finish this fast well, but I can tell I’m loosing momentum. I’ve learned over the past few weeks that finishing well is one of my weaknesses. For instance, when I clean the kitchen, I’ll do everything but wipe the counters down and scrub the last pots in the sink. Or when I’m doing the laundry, for some reason I’ll wash, dry and fold it, but procrastinate in putting it away. Not quite sure why I’m like this, but I know that it must have something to do with my personality and I’m working on it. The only thing I can honestly say I’ve finished is a marathon, 1/2 marathon and several books. Don’t be too impressed though, cause I can no longer call myself a runner since I can’t even run down the street with out stopping anymore. One day though, I’ll run again:) For now I’ll run mentally through my list of to-do’s.
